Kinder Bueno Cupcake Recipe

Sometimes you just have to treat yourself! I've decided to do a super indulging and chocolate based recipe! Some of you may have given up chocolate for lent, however IMAGINE how amazing it's going to be biting into one of these bad boys when Easter comes! It will be here before you know it, so it's always best to be prepared, right?

This recipe is honestly so easy! It's your classic vanilla cupcake sponge, however it's the icing that does all the talking - The icing is on another level if I do say so myself! I'm a strong believer in simple baking, I don't think all the avant garde stuff is all that delicious, simple but good baking is the best kind! So, let's get baking!

WHAT YOU WILL NEED:
FOR THE SPONGE
125g of self raising flour
125g caster sugar
125g of soft unsalted butter
2 free range eggs
1 1/2 tablespoons of whole milk
1 teaspoon of vanilla extract

FOR THE ICING
A very large dollop of nutella!
400g of icing sugar (or until the butter and icing sugar combines how you like it to!)
200f of soft butter
1 tablespoon of whole milk
Kinder Bueno pieces to decorate!

METHOD

1. First of all, you're going to want to pre-heat your oven to gas mark 6 or 200 degrees! You want to make sure your oven is hot when the cupcakes go in!
2. Now line your cupcake tin with some cupcakes cases, I used these really cute cupcake sketch cases from Home sense!
3. Now sift and add all the dry ingredients into your mixing bowl and combine
4. Now to add the wet ingredients and combine the mixture until it's thick and smooth!
5. Spoon evenly into the cupcake cases and pop the cakes into the oven for 15 minutes (this will depend on the power of your oven, be sure to keep checking them!)
6. Once the cakes are golden and springy to the touch, leave them to cool and move onto your icing!
7. Place the butter into a mixing bowl and beat with an electric whisk for around 2 minutes until the butter is significantly paler
8. Gradually add in the icing sugar and continue mixing with an electric mix with a medium speed
9. Add in the milk and continue mixing - The key to perfectly creamy and light buttercream is to mix it until it's a lot paler and feels lighter!
10. Add in the Nutella and mix it until it's fully combined with the rest of the frosting, it should be a pale brown colour
11. Pop the icing into an icing bag and ice away! Then add your Bueno pieces for a bit of decoration!

I hope you all find this recipe helpful! It's always really therapeutic to put down the technology and bake something delicious for your family and friends!

Love,
Abigail
